I’m done with carbonara, tomato sauce, pesto… I need something new but still want pasta. But how about avocado pasta? doesn’t it sound delicious?
I have been crazy with avocados those days! Guacamole, with toasted bread with olive oil and sea salt, in my morning smoothie or even just by itself! yes I’m in love…
So the idea hit me this afternoon, let’s make a delicious avocado sauce! It’s super easy and so delicious!
All you need is :
- any type of pasta, I took spaghetti
- 2 ripe avocados
- 2 cloves garlic
- lime juice (a half lime)
- fresh basil
- salt, pepper and olive oil
- some cherry tomatoes
Peel and cut your avocados, mince your garlic and place them with the salt, pepper, 2 spoons of olive oil, the lime juice and basil into a food processor and mix.
In a large pot of boiling salted water, cook your pasta according to the package instructions. During that time, cut your cherry tomatoes in half.
When your pasta are ready, drain the water then combine the pasta with the avocado sauce. Serve it in a plate and add the cherry tomatoes and some mozzarella and you ready to eat!
I love making good and healthy food! Most of the time is easy, quick made, not that expensive and much healthier than fast-food places !!!
