Today let’s talk « cuisine »! 

Sometimes eating vegetables by itself can be super boring.. thanksfully I found an amazing recipe to make vegetables more fun and I’m not gonna lie kinda addicting.. Since I found that one of a kind recipe, I make it every week!

They’re so versatile. For today’s recipe I used zucchini, ham & mozzarella but let’s be real there’s a billion of combos. Tomatoes, basil and mozzarella, eggplants, pepper & carrots … you got it, the possibilities are endless!

I made this recipe as a cake but you can certainly do muffins! It’s a super nice idea for an aperitif with friends!

So let’s get into it! You will need :

  • 120 grammes ham
  • one zucchini
  • lemon zest
  • 250 grammes  flour
  • one tablespoon baking powder
  • three eggs
  • one nature yoghurt
  • mozzarella
  • 8cl olive oil
  • one tablespoon mustard
  • sal & pepper

Heat the oven to 200 degrees, wash the zucchini, remove ends and finely grate it, place it in a colander and add some salt and drain for 10 to 15 minutes. Squeeze out excess water from the zucchini and set aside.

Take the ham and the mozzarella and cut it into small cube.

Sift the flour, baking powder and salt into a bowl. Stir in the eggs, yogurt, and olive oil, mix well to obtain an homogenous paste.

Gently add the mozzarella, zucchini, mustard, lemon zest and ham, mix well with a wooden spoon.

Pour the batter into the prepared loaf pan, bake for 10 minutes, reduce the temperature of the oven to 180 degrees and bake for 35 minutes.

Serve warm with a fresh salade and you are ready to go!
