Christmas Cookies

 

One of my favorite things about the holidays is coming up with new cookies recipes to try and share with my family, Today I am super excited to share two of my favorites recipes!

Believe me, you can never have too many kinds of Christmas cookies, especially when they’re as good as these ones.

  » Almond Crescent  Cookies »

  • 250 grams flour
  • one pinch of salt
  • 200 grams butter
  • 75 grams powdered sugar
  • one tablespoon of vanilla extract
  • 100 grams ground almonds

For this recipe I use my hand to mix the ingredients. 

  1. Put the flour in a bowl, add the softened butter and the pinch of salt. Mix until it get fluffy.
  2. In the same bowl add the powdered sugar, the vanilla extract and the almonds then kneed all the ingredients together.
  3. Leave the dough to rest for an hour in the fridge
  4. Cut the dough into slices and create crescent shapes.

5.  Place on baking tray and bake in 200 ° C for  approximately 10 to 15 minutes .

6. Dust the cookies with a mixture of powdered sugar and vanilla while they are still warm.

« Raspberry Linzer Cookies » 

  • 250 grams softened butter
  • 125 grams powdered sugar
  • one tablespoon vanilla extract
  • one pinch of salt
  • one white  egg
  • 350 grams flour
  • 200 grams raspberry jam

For this recipe I used my electric mixer

  1. In the bowl, mix together the butter, the sugar, the vanilla extract and the pinch of salt until they are combined.
  2. Add the white egg and the flour.  Mix on low speed until the dough starts to come together.
  3. Leave the dough to rest for an hour in the fridge
  4. Remove one of the dough pieces from the fridge and allow to warm for a bit until it’s soft enough to work with, Roll the dough out.
  5. Cut the dough into desired shapes and transfer the cut pieces to your cookie sheet. You need equal numbers of solid cookies (bottoms) and cookies with cutouts (tops).Processed with VSCOcam with f2 presetProcessed with VSCOcam with f2 preset
  6. Bake the cookies for about 6-8 minutes until they just begin to colour around the edges.
  7. While they are still warm, spread at dollop of jam on the bottoms cookies

  8. Gently sandwich the tops and bottoms together.

  9.  Dust the tops cookies with powdered sugar.
